Ingredients

3/4 cup raw pumpkin seeds
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon garlic powder

Directions

Preheat oven to 350 degrees. Rinse seeds in a colander, removing any excess pulp. Transfer to a paper towel and thoroughly pat them dry.

In a bowl toss seeds with olive oil, salt, and garlic powder. Mix well. Spread seeds evenly on a large baking sheet lined with parchment paper. Bake, string occasionally, for 20 to 25 minutes or until seeds are golden brown.

Makes about 6-8 servings

Ingredients

1 (14 oz.) can full-fat coconut milk
3/4 cup pumpkin puree
1/4 cup maple syrup or 2 pitted dates
2 scoops unflavored collagen peptides ( I use Vital Proteins)
1 teaspoon pumpkin spice
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon fresh ground nutmeg

Directions

Combine all ingredients into a blender and blend on high for about one minute. Pour creamer into an airtight container and store for up to a week in your refrigerator.
Shake vigorously before each use.

Balsamic Vinaigrette
1/4 cup extra virgin oilive oil
1/4 cup balsamic vinegar
1 tsp. Dijion mustard
1 clove garlic, minced
salt and pepper, to taste
Greek Vinaigrette
1/4 cup extra virgin oilive oil
1/4 cup red wine vinegar
1 tsp. Dijion mustard
1 clove garlic, minced
1 tsp. dried oregano
juice of 1/2 a lemon
salt and pepper, to taste
Italian Vinaigrette
1/4 cup extra virgin olive oil
1/4 cup red wine vine
1 clove garlic, minced
1 tsp. Dijion mustar
1/2 tsp. dried oregano
1/2 tsp. dried parsley
1/2 tsp. dried basil
a pinch of red pepper flakes (optional)
salt and pepper, to taste
Lemon Vinaigrette
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice
zest of 1 lemon
1 tsp Dijion mustard
1 garlic clove, minced
salt & pepper, to taste

Directions

Place all ingredients into a small jar with a tight fitting lid. Shake until well combined.

Ingredients

Short or tall glass filled with ice
1/2 or full shot of Malibu Rum (optional)
1/8-1/4 cup of pineapple juice
Coconut Seltzer or plain club soda

Directions

Fill a glass with ice. Add the rum and pineapple juice. Fill the remaining glass with coconut seltzer. Stir to combine.

Ingredients

10 fresh mint leaves
1/2 lime, cut into 4 wedges
1 cup of ice
1.5 ounces white rum
1/2 cup club soda

Directions

In a large glass, muddle mint leaves and 1 lime wedge. Add in 2 more lime wedges and muddle.
Fill the glass almost to the top with ice. Pour rum over ice and fill the remainder of the glass with club soda. Stir and taste. You can add in a pinch of sugar or a little agave if needed. Garnish with the remaining lime wedge.
